Edit: Beer wise - Is a tour of the Guinness Brewery worthwhile? Is Kilkenny available to tour? One or both may be a must-visit, regardless, as they really seem to be the only Irish brewers that I am aware of that are available in Ontario (and I do love Guinness from a fresh keg! ).
