Ahearnes

Aside from great food and a good place to stay the always have a few decent whiskeys, the Old IDL plinth with Bushmills etc, and maybe a dozen Scotch single malts. And a Dungourney, which is handy if you have a bottle and don't want to open it to taste it.

The Nook

Not a huge selection for sale but a few decent bottles, including Greenspot from time to time.

Of most interest is the display cabinet with a lot of very old Tullamore and Midleton (full) bottles along with a few old Powers, Jamesons, Redbreasts etc.

Ballymaloe

If you ever happen to be in Ballymaloe house they've a decent selection too. Being close to Midleton you'd expect a good Irish selection but they've a few interesting Scottish Malts also.
