I'm writing a feature for Whiskey Advocate on these and know most of them.

Just wondering if anyone wants to suggest one of the less obvious ones that would be worth covering, especially outside Dublin?

Tigh Neachtain is a favourite of mine in Galway city, large whiskey list with a strong connection to the galway arts festival etc. had my very first glass of green spot there at the tender age of...

then of course there're the obvious dublin L Muligan Grocer, Palace Bar, W.J. Kavanagh etc

The Dylan Whiskey Bar, John St. Kilkenny. They won the Power's Snug of the Year comp. last year. You could visit John Cleeres Parliament St. Kilkenny, opposite the brewery. A great whiskey bar. Hmm, some great tasting sessions there over the years of my stay in Kilkenny.
